Black Pepper Beef -recipe

Ingredients:
Undercut                                      200gm
Green and red
capsicum Onion (finely cut)        4 tbsp
Garlic (fried)                               1/2
Black pepper (crushed)               2tbsp
Soya sauce Cornflour Salt Oil    1 tbs
Fresh coriander                          as required
 bamboo shoots                          for garnishing
 carrots                                       for garnishing

Black Pepper Sauce Ingredients:

Black pepper (crushed)                          1 tsp
Sugar                                                      1 tsp
Tomato ketchup                                     3 tbsp
LP sauce 1 tsp
Bay leaves                                             3
Garlic (chopped)                                   I tsp
Chicken stock powder                          1 tsp
Butter                                                    2 tbsp
Method:
Mix all the sauce ingredients except butter in a bowl. Melt butter in a pan and cook the sauce for 1 minute, infuse charcoal smoke and set aside.
Marinate the undercut with black pepper, soya sauce, cornflour and salt and set aside for a little while.
Heat oil in a wok and cook undercut for five minutes stirring continuously, remove from flame.
Heat a little oil in another wok and fry onions till they change colour, add ginger, garlic, undercut and sauce and fry.
Place on dish and garnish with fresh coriander, bamboo shoot and carrots.
