Bitter gourd with minced meat(qeema bheray karailay) 

 

 Ingrediants
1-Bitter gourd    5
2-Beef (minced)      2 kg
3-Onion (chopped)    3
4-Tomatoes (chopped)    4
5-Raw mango (finely cut)    1 tbsp
6-Green chillies    4
7-Ginger/ garlic paste    2 tbsp
8-Red chilli powder    2 tsp
9-Turmeric powder    % tsp
10-Red chillies (crushed)    1 tsp
11-Cumin seeds    1 tsp
12-Cumin seed powder    1 tsp
13-Spice powder    1 tsp
14-Yogurt    3 tbsp
Procedure
     1-Peel bitter gourd, cut lengthwise and remove seeds.
   2-Rub turmeric powder and salt on gourd, set aside for an hour then wash with warm water and
       leave  in a strainer.
3- Heat oil in a pot and add onions, tomatoes, ginger/ garlic paste, cumin seeds, red chillies, salt and minced beef. Cook till the meat is tender.
   4-Fill the minced beef in bitter gourds and wrap a thread around them.
5-  Heat oil in a pot and fry bitter gourd and remove.
6-Add onions, ginger, garlic, raw mango and tomatoes in the pot and hry, add turmeric, fresh    
    coriander and yogurt. Cook on low flame for 15 minutes.
   7- Add bitter gourd in the pot and leave on dum.
   8-Place on dish and garnish with fresh coriander.
